How you enjoy your yoghurt is intrinsically related to how your ancestors enjoyed theirs. Unlike many foods that gain traction because of an Instagram post by a social influencer, it is safe to assume most yoghurt influencers are someone’s relative who has passed down their family traditions and recipes. In her article for the BBC travel blog, Madhvi Ramani quotes Elitsa Stoilova, a native from Bulgaria:

If two grandmothers in different villages make yoghurt from the same products, the results will taste different. This is because yoghurt is an intimate product. It is linked to the land, the animals and the particular taste of the family and the knowledge of it is passed down from generation to generation.1

With this perspective in mind, it is no surprise that yoghurt remains integral to the diets of people living in the regions where yoghurt planted its roots. However, as people migrate, they take with them their culture (quite literally for some who use their family yoghurt culture brought over from another place). There is a global sharing of traditions and customs, tastes and aromas, preparations and inspirations that showcases how the world seamlessly embraces this versatile food.
